Inquiring mind: "What?! You opened?!"
BadWolf: "We did and the great news is we didn't run out of beer this time!"

On opening day, there was an overwhelming turnout. Lots of smiling faces and great memories were made. Smokes BBQ was outback, the BadWolf racing bike was on display, the musicians sounded fantastic, our team was busy running the bar and the beer eagerly sought a good tasting. All went well and we proudly broke in our new space!

Now our team is busy making beer in both locations and the kegs are stacking up, ready for rental from customers and for distribution to the local restaurants. Below is a picture of the microscope for the new yeast lab - many thanks to our friend. Our yeast lab manager Ryan will work to isolate & develop new strains of yeast. Come visit the new taproom which are the same hours as little BadWolf or book us for your next private event! Little BadWolf boasts of new recipes and amazing popcorn. Give them a visit too!! Check out our event calendar!
We are super excited about our progress on the second location. The average turnaround time for the approval of the Brewer's Notice used to be 100 days. We were informed it would take an extra 20 days due to the volume of other applications. So the 20 days had passed and the question became whether we should let them do their job or check in on the status. It was decided to give them a quick call. The TTB brushed off the dust on the application and began reviewing it. After some back and forth Jeremy realized we sent over the wrong bond from the other location. Once that was cleared up, TTB had everything they needed to process the application. On May 1, we received official approval!! Now we are halfway though the VA ABC application process. (For a second location you must obtain the Brewer's Notice & a new ABC license). Once our ABC license is approved, we will begin to brew.

Since the last blog post, we have also made massive construction progress! Acting as our own GC (General Contractor) has made the journey a bit intimidating BUT our team has has done great work so far and we've passed inspections. We have to thank these folks and everyone else in the process so far:

Loveless Porter Architects

BEI - Structural Engineering firm

MEP - Mechanical, Electrical, Plumbing Engineers

PRP, LLC (Plumb Right Plumbing)

Systems Inc (Electrical)

RJ Mechanical

Alliance Steel

Drywall Specialties Inc

EM Tech Engineers (Inspecting Reinforced Steel)

We also want to thank:

Volunteers who put together our new tables

My husband and the staff for their blood and sweat: Jeremy, Jesse, Ryan, Claire & Bryan

Turtle for his beautiful mural

Isaac - our son who loves to visit both breweries with excitement, patience and a smile

All of the suppliers for our new equipment & cool merch

FVC Bank

City of Manassas

VA ABC & TTB

Family, friends, & freaking amazing customers!

Additionally, we are preparing to bring on more members to our team, decorate the new space and fill it with the most important product of all: BEER! Since my husband and some of the other amazing brewers are great with the technical aspects of brewing, I have encouraged them to write about the brewing process, recipes, and stuff that you might enjoy in the future! Who cares about all this business stuff, right? (I love writing about it)

When we open the second location, you can look forward to bottled beer available for pickup and eventually pickup your keg for a party. Dare I say this? The projected opening date is on or near June 19, our two year anniversary for BadWolf. If you want to receive an email for opening, please visit our home page and drop us your email address.

Lastly, I would like to say that your belief in us has brought us to the step we originally dreamed about. Our potential to positively impact the community and continue to build a better community will be enhanced with "Big BadWolf". In the second location, we will be able to continue to raise money for charities, offer yoga classes, art classes, comedy nights, live music, book readings, group meetings and a roomy enough place where you can actually find a seat! Some might refer to BadWolf as a second family and we can't wait to continue the journey with you and the future people we meet. Great things can come from good beer, right?!
The second location is in progress! We are now past the halfway point in the project. It took a few months to get the drawings finalized with the A/Es, with approval from the City on Jan 29. With over 6,000 square feet we are able to do all sorts of exciting things.

At Big BadWolf, we will do our best to keep the atmosphere of the old location in the large space. We have some awesome ideas and will save those for opening day. We are very excited to be able to lager now with Glycol Chillers which Jeremy is focusing on brewing a proper pilsner - something he has always dreamed of doing. Now with the proper professional equipment, this dream will come true. He plans to make several German style beers and improve the beer quality on several current recipes. We will have ten taps available with one dedicated to a "beer for the cause" to raise money for local charities. We do plan to have kegs for sale for your party and we plan to do some hand bottled beers and eventually incorporate a canning line.

With a larger economy of scale, BadWolf will be able to source local ingredients, especially hops from the area. (We are unable to do this with little BadWolf because it arrives in too large a batch and with fresh hops, it can go bad rather quickly.)

Big BadWolf will have a dedicated yeast lab to isolate and develop our own strains. We plan to go out and collect many wild yeast samples. The yeast lab will be visible from the customer area through windows. It will include microscopes, petry dishes, a centrifuge, refrigerators and all the cool lab stuff one might imagine.

Our new website is in the process of launching too so we will be able to keep you up to date with the latest and greatest stuff.

9776 Center Street location aka "Little BadWolf" will remain open since it is the heart and sole of everything we do. With over 250 recipes and counting, the experimental focus will continue and those beers will not be found anywhere else.

Here's to 2015! We should be open in June or earlier.

In the previous blog, we discussed the issue of the restrictions in opening a brewery in the county. However, this past Tuesday, we received a call from supervisor Mike May's office with the news that there was an interesting article in the Potomac Local news. The office was happy to report that Prince William County had just finished updating their code to allow breweries in the zoning districts that were originally only open to brew pubs. Recall the coffee shop brewery model? Now it is legal in our County to open a small brewery in a zone like a shopping center! BadWolf played an integral part in helping the county in this endeavor and they wanted to thank us. We were ecstatic!! Holy mackerel, this was all great news!! It's too bad we missed the opportunity in Tacket's Mill however, the spot is now up for grabs to help another entrepreneur's dream come true.

With that said, it great to know that a small business in a little 1,200 square foot space can make a big impact in the community. If anyone is interested in starting a small brewery in the county, please feel free to reach out to us for any questions. We would be happy to help. 571-208-1064 ask for Sarah or Jeremy. Cheers! :-)
This time last year, we began the search for the new space and for one reason or another, it did not work out. There were several options and ideas thrown about. One of the particular jurisdictions we had considered was Prince William County, a place we grew up in and knew well. We almost picked a neat little spot in Woodbridge, which the biggest obstacle were the laws pertaining to breweries in the zone we had our eyes on. I guess "pertaining to" would be incorrect; the issue was the zone would not allow our particular business model to work. We wanted to place a brewery (just like little BadWolf) in a B-2 space. Sadly, we did not have time to wait for the process in working with zoning officials and the county to change the legislation. It was disappointing but at the same time, we had another idea. Why not pave a path for other breweries to make it easier for them to open in the B-1, B-2 zones?

So, we proposed that they refine and update their code to help other breweries to open up in the future. Jeremy was asked to speak with several local municipalities to clarify our own business practices and current zoning in the City of Manassas. This talk, along with suggestions to the Prince William Zoning Board about ordinances pertaining to breweries is now showing results! They are moving forward with a new proposal to make it legal for a brewery like our little BadWolf model to open up in commercially zoned areas within Prince William County. This is very exciting news!!

Currently, in Prince William County a brewery can operate in the M-1 and M/T districts, those are the industrial sectors. That leaves the potential new operation with just a few districts to choose from on the zoning map. However, one could also open a brew pub/restaurant in a B-2 zone but NOT a "brewery" according to the County's definition. What about a small brewery operation that's no different than a little coffee shop? The only way it would work is if you have food served under the restaurant definition, then the brewing operation may now meet the proper criteria. Oddly, the Virginia SB 604 in effect as of July 2012 allows for breweries to operate in Virginia to serve pints on site to customers without food. It only makes sense to trickle this down to the county municipality and update the codes.

In the Prince William Zoning Ordinance breweries and brew pubs are defined as:

Brewery and bottling facility shall mean an industrial operation involving the brewing and bottling of beverages for local, regional, or national distribution and which may involve routine truck traffic. Brewery and bottling operations may be permitted in restaurants as an accessory use when integrated into the restaurant operations, with limited distribution and wholesaling permitted.

Restaurant: A retail food service establishment with table service (order placement and delivery) provided to patrons; also including cafeterias with table attendants; carry-out trade, if any, shall be a limited portion of the facility; traditional sit-down dinner establishments with waiter/waitress service.

We will keep you posted when the new ordinances are approved and of course provide more details about the expansion as we move forward. Stay tuned. We hope that Prince William County will soon become a little brewery mecca and serious tourist destination! This will boost the economy in the county and provide an opportunity for even more jobs and lots and lots of amazing tasty, beer!

Cheers!!
When you hear "brewmaster" what comes to mind? In the craft beer industry today we might automatically think of a person with credentials, perhaps a deep formal education in brewing, chemistry or the like. With that background, the person would essentially learn the true art of craft brewing.

The definition of a brewmaster from Merriam-Webster is "a person who supervises the brewing process of malt liquors." Excellent, it's far more simplified than all the hype. I believe the main requirement for a "brewmaster" if I had to associate the title with a definition is simply a passion for making great beer and enjoying what you do. Everything else will follow suit including the improvements and tweaks to the recipes. If you love what you do, then you're good to go and anything can be learned. In order to do or have, you gotta "be" something first. In our case, we are happy and love making beer. We don't have tons of awards, formal education in brewing, but there is experience, know how and pure passion for our product, our company, and most importantly, our customers who totally rock! Without their feedback, support and comments, we would not be where we are now. We are also so thankful to have supportive networks of friends, family, employees, community, the city, Historic Manassas, and fellow brewers (homebrewers and professionals) and fellow business owners.

What matters most in the end is whether people enjoy your beer. Pure and simple. If they do, then great and if not, then make adjustments accordingly. Does one need a formal education or some fancy title to be great at what they do? Absolutely not! The founders of GREAT companies dropped out of high school and college and many started billion dollar companies out of their garage. (Microsoft and Apple)

We at BadWolf Brewing Company could quite possibly be in the category of nothing more than "glorified homebrewers". That's cool, no seriously, who the hell cares where you came from if people enjoy the beer! One thing remains true and that is brewing is not just a science but it is an art and there is plenty of wiggle room to bend the rules to make new and exciting beers! Titles are the least of our worries. So relax people, it's just beer!

Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-6515580322238282855.post-59880836558074021482014-03-15T08:47:00.002-07:002014-03-15T08:49:32.626-07:00It's all about branding and logos, isn't it?So many emails and suggestions come to us to "brand" our company with fancy logos and beautiful designs. In fact, some emails have arrived with people saying our logo particularly sucks. "Suck" is a harsh word but it sends a powerful message, they are remembering us ironically. Perfect, that is exactly what we want!! We have been compared to other breweries and companies and are told we "need" a logo. Maybe so, but our stance has always been people will remember us by our beer which has to speak louder. The simplicity of the font, wording and black background IS BadWolf's brand but it sure as hell is not fancy. Sometimes all you need is to KISS (keep it simple silly).

Another point to keep in mind is this, "What do you think of BadWolf in your mind when you hear the name?" You have automatically envisioned a concept or better yet, your very own logo, right? That is our hope that our brand drums up an image in your mind of something that one cannot forget.

Traditional marketing teaches us the idea that we have to go about marketing a certain way to get the message out there but we have a unique view that the beer (our main product) should speak the loudest and IS the brand. If it doesn't speak loudly, then we have nothing. BadWolf is all about great beer and that my friends is everything.

So grab your t-shirt and wear it proudly! All of our t-shirts are made in the USA and printed locally! Our stickers, key chains, steins and 90% of the merchandise is USA made.
The team at BadWolf would like to thank everyone for such a fantastic first year! It has been an incredible journey which we could not have done it without you. We've come a long way from a simple concept to where we are now and have much to look forward to in 2014. Through the many obstacles and successes, BadWolf has established itself as a great little brewery in Manassas and we will always strive to constantly improve. This year, Jeremy and the brewers have made over 70 different recipes. Some beers beginning to repeat by popular request. My guess is that you might enjoy these fine libations.

As we continue to refine our brewing process, the beer only gets better. We've added more 55 gallon fermenters to allow more time for the fermentation process, streamlined the process and added oxygenation. Just a few days ago, a shipment of two new 100 gal fermenters arrived. Jeremy and Ryan had the opportunity to double batch a session porter ale today after a 12+hrs of brewing! (Very soon you can enjoy the fruits of their labor from the new fermenters.) On one morning, I noticed that part of my office suddenly converted into a yeast lab thanks to Jeremy.

Something else we've squeezed in were more bar stools. So far, the extra seating has been a hit and a relief from standing. Now we are open on Sundays from 1-6pm. On busy days space still remains tight but we are working on fixing that....
I am happy to announce that most of the BadWolf gear is made locally (or in the USA) and one of my favorite pieces from this year is the BadWolf handmade mug made by Dirty Bird Pottery. If you get one of these babies, bring it in the next time for a fill. We get a batch of eight mugs every month.
Truly, I can thank a friend for that because it's now a yearly habit to start thinking about it around the end of August. I begin to wonder, do I have to go back to school? Then reality hits, "No. Wait. We run a
brewery..." So nope, this is not applicable for Jeremy and I.

Anyways, I'm happy to say that we got the labeling issue all straightened
out. We failed to do our due diligence. When ABC said "Here's
your label approval packet" we said "oh well were not
distributing" and that was that. Later, when it was time to pay taxes we
found out that all beer sold in VA must have a label of some sort. We
got our labels approved and re-opened. Now we're good to go.

September. At this event, our hope is to bring in a BBQ pit, ice cream truck, live
music, have a raffle, bring in some fancy cars for lookin' at, and offer some
specially bottled German beers to supplement BadWolf's taps. We are now in the
planning stages and as soon as we have all the details ironed out, we'll let
you know! Until then, come on down and have a pint and get a growler or

Period. BadWolf does not even bottle beer to sell inside our store (at least for now). Our growlers are not pre-filled either which would reclassify them from the "large glass" category to the "bottles" category which has a special label like you see on the growlers at Sweetwater Tavern. We only sell pints and fill growlers on the spot. As far as we know, I think we are the only brewery in the state in this scenario, at least for now... I know that this will change and more breweries will come down the pike with many different business models and some may be like ours. Hey, that's totally cool, no problem the more the merrier! There are so many breweries in the planning stages... watch out because Virginia and the DC metro area is about to become the next best craft beer destination on the East Coast!

Getting straight to the point, the issue is with the label itself in that it only requires the following:

name of brewery

city

state

name of the beer

container size

The next question I asked Jeremy was, "why"? Isn't a label concerned about the nitty gritty details of what's in the keg? And I thought this was regulated by TTB? Well, it's not regulated by federal law when it comes to our kegs behind the counter, it's a state thing. So then I ask, "Why are we putting labels on our 5 gallon kegs to be stored behind a counter that a consumer is not viewing and the kegs are not being distributed?"

Virginia code, as stated in my previous blog, explains that beer manufactured in the state must be labeled. This is understandable however, I believe this code was most likely written at a time when large breweries made beer mostly for distribution or to move their beer from one location to another. For some time, Virginia had only a few large national breweries.

Why label these little kegs hanging out behind the counter if they are not leaving the premises? I don't label my growlers leaving the premises...? However, we do have to pay for each keg label. Though the payment is only $30, BadWolf brews 5 new beers a week. How could we get creative if we are stifled by limiting our beer selection and did I mention that it takes up to 30 days to approve a label? I have no problem paying for a label for our future bottles and distributed kegs by the way. That is completely understandable from all perspectives.

By the way, the label issue came up while we were submitting our VA beer taxes as they required a label approval number which we did not have because when we heard "labels" we assumed it meant distribution or for bottling. As far as we knew, this whole subject was N/A. When Jeremy looked over the tax form, it was truly setup for just a few labels, not anything like our request.

Our proposed solution #1: exemption from ABC label approval for draught beer served on the premises of the manufacture that will not be distributed.

My second proposal, label the keg but forget paying the $30 a pop. Third solution (if the law doesn't change in my lifetime) make less varieties of beers which would stifle recipe creativity and anyone else following suit. And no it wouldn't result in a free for all because beer is beer. It cannot be made any other way. Current Scenario - how about we make many varieties of beers and pay 5 x $30 every week with a 30 day waiting period? That's what we just submitted to ABC - $300 for our varieties of beers - probably more than most large breweries have submitted in a year. I hope that covers our beer recipes for the next few weeks! In the meantime, we await approval while our BadWolf operation is temporarily shut down so we avoid being fined or charged. Nah, scratch all that, I vote for Solution #1.

Seriously, as silly as I sound, I urge all the key people to help us fine tune the ABC label approval process to make sure it is conducive to the spirit of SB 604 and to our newly budding breweries and all of the great local craft beer about to come down the pike. Please tell your local delegates and state senate and anyone else involved with VA law to make an exemption for kegs sitting behind the counter of the beer manufacturer (that is the kegs not being distributed). We don't do it for growlers, why is it necessary for kegs?

With all due respect, what I say in the blog is meant to be completely open and honest with anyone who reads it. I do not want to hold back nor walk on egg shells and all that political stuff. I just want to express a legitimate concern and begin the journey to make some changes for a growing craft beer wave. I just don't know where to start except to voice a concern. Anyone good at drafting a new law? Maybe DC will someday be the next beer city USA!
Our apologies for the terrible news. BadWolf WILL BE CLOSED
temporarily until all of our labels are approved. It may be 30 days but
hopefully not, we are trying to expedite the process. Even though we ONLY do
onsite consumption, and no bottling nor distributing, we have discovered VA ABC
still requires labels for EVERY SINGLE BEER BREWED even though the beer is
behind the counter in kegs in our small operation. This means, we must pay for
a label for every beer brewed which could mean less varieties for everyone.
This out of date law does not help local small breweries in Virginia http://leg1.state.va.us/cgi-bin/legp504.exe?000+reg+3VAC5-40-50.
Tell your local delegates we need to change the law to allow small breweries
the ability to brew a small variety of batches without paying $30 for every new
beer and waiting for up to 30 days. BadWolf brews 5 new beers a week so we would
have to approve 5 new beer labels every week? If this doesn't get fixed, we may
be stuck brewing the same beers for several months and have only a few seasonal
rotating beers. We do not want to
deprive our happy customers! Also, on another note regarding laws, we need to
lower the VA license fee for breweries from $2,150 to the same price as a
winery $189 and allow us to drop off our kegs to local restaurants and retailers
as wineries do. Let's change the Virginia Winery Distribution Company
to the Virginia Wine and Craft Brewery Distribution Company.

After the ABC license was granted, there was a short window of critical path administrative stuff to finish before opening. We immediately applied for the special event permit through the city and the Banquet License through VA ABC. All of the permits came through just in time, whew. We got all our ducks in a row at the last minute. The beer was busy fermenting and we had a backup plan for the parking lots...just in case. We received permission to park in the locations nearby. Our BBQ team was ready - Smoke's BBQ such tasty food! All of our incredible staff knew their stuff and we could not have done it without them. They were well prepared! We had the honor of the Manassas City Mayor Hal Parrish, along with Vice Mayor Andrew L. Harrover, Surpervisor Ian T. Lovejoy, Supervisor Johnathan Way and Delegate Rich Anderson, Delegate Jackson Miller come to our ribbon cutting and support the new venture!

The night before the event, we did not sleep. Since the conception of BadWolf, it had been almost one year. So much planning and preparation had gone into the business. Some people even asked what it was like on opening day. Being a new momma and all, I could only compare it to having a new baby. It was THAT EXCITING and you know, we prepared for this "baby" longer than 9 months. So yes, BadWolf is like our second son in a way. I remember tossing and turning the night before the opening worrying if we would be able to serve people quick enough. It turned out that we could not serve them quick enough because the line went across the plaza! In fact, many waited up to one hour and everyone seemed surprisingly patient and understanding. Friends, family, colleagues and so many people showed up! It was overwhelming. Jeremy being the critic that he was of his own beer worried if people would like his beer. He did not have to worry because the six beers were a hit:

Did we anticipate a line across the plaza on opening day? No, not really though we noticed over 100+ RSVPs on the 2 Facebook invitations and figured a steady stream of people would come on by, not 500+. Word did spread fast based on the flurry of online activity and updates from friends at the last minute and of course if someone says "craft beer", people are there in a flash, especially if it's made in their own home town! I remember when Jeremy and I were looking for breweries to visit while on travel. I like to think of finding a new brewery as a quest. I am happy that we are now part of someone else's beer quest.

After opening night beer sold out each day for the next two weeks. Someone even suggested we make a new shirt titled, "Where did all the beer go?". During this time, Jeremy and his assistant brewer's brewed almost every day of the week. I am happy to say that Jeremy is now a full time brewmaster and expects to have a full lineup of beers the week after next. Thanks for your patience as we ramp up production. We originally planned to only brew twice a week, not six! We also hope to expand tap hours in the future, for now these are the planned hours.

Fri 3-10pm

Sat 2-10pm

Next week we will be open for the 4th of July and continue normal tap hours (unless of course the beer taps out before closing time). I would also like to announce that we now have a real phone number, so when you call us, you hear a real person on the phone during taproom hours 571-208-1064. Google voice wasn't cutting it, lesson learned. Next week we will have an Orange Cream Wit, the Not Bad Brown due to popular demand & maybe a surprise beer on tap. Until then, have a fantastic week and we will see you on Wednesday!
I've seen hundreds of emails but not one has arrived as demanding and as succinct as this. Then the person simply signed his name at the bottom. Later there was another one from a Dr. Who fan which came in from the midwest. They wanted a bottle of beer with BadWolf on it for their friend as a joke. The idea being to put Bad Wolf on every day items everywhere this person went. (Those who have seen the new series understand the significance.) Since we don't have beer in bottles or any beer at all just yet, we suggested he get one of our pint glasses or growlers. Someday, maybe this guy will give us an update. Yesterday, someone texted Jeremy saying it's really hot outside and he wants beer from us like pronto! Poor guy has to wait another month.

So as you are aware, we were pushed back another month due to a monster setback. The arrangement with this fellow posing as a licensed contractor to install the ventilation system never got underway and we witnessed a large sum of money basically fall into the abyss. The setback has been frustrating and a pain in the ass. When you look at the whole picture, walking with $3,260 is one part of it but delaying our opening another month means additional operating costs, delaying our permitting processes and now our ABC license is pushed out. What really sucks is that all of our future fans are delayed a taste of BadWolf beer. You know what? It's been really hot outside lately!! Here is the article published around the time the media got wind of the news. Did I mention Jeremy is dying to brew beer too! We have so many recipes and beautiful grains just waiting to utilize their potential in the new brew kettles. And our new water filtration system is fabulous. I love the water coming from our BadWolf sink. It's so tasty which means more consistent tasting beer.

New date TBA but we are looking at Mid-June. Hey, don't go on vacation just yet, we will be open before you know it!Unknownnoreply@blogger.com2tag:blogger.com,1999:blog-6515580322238282855.post-17514599438603008292013-04-27T10:43:00.000-07:002013-04-28T09:19:48.082-07:00April 27, 2013 UpdateSo we ran into a slight pickle but as always, the BadWolf team bounces right back. While we get ourselves reorganized and finish the last bit of construction on the ventilation system, our hope is to open late May. We've got our beer recipes ready to brew. The lineup may include:
Our goal is to utilize local ingredients in many of our recipes. If you know a local farmer who would be interested in supplying us hops, grains, or other beer ingredients, send us an email on the contact tab. Thank you! http://www.badwolfbrewingcompany.com/Contact-Us.html
The excitement brings back memories of the closing day for our house, only add triple the anticipation and a few more (well, several more) variables! Wave a magic wand and poof, BadWolf is ready. Not so fast! If you think it takes this long, double it. If you think you need x, think 2x. If you think you know it all, you know nothing! That's what I have learned in the past year. Plan it out in so much detail and it sort of helped, even with all the countless hours then you say, "at least I had a plan". Better to think of it as a guide. Persistence is a must and if the quality of self-motivation is nonexistent, you will be screwed. That's my take on this nano operation. At this point, remaining items: revision to the proposed ventilation system and ABC inspection. This is one of the last steps prior to our state license. Once we have the license, we will brew our little butts off. And as the wife in this operation, I will learn to brew too! I look forward to making my own beer along side Jeremy. I would like to name one of my beers "Git Some" or "BadWolf One". If you want to receive the email for our opening date, send us your email address: http://www.badwolfbrewingcompany.com/Contact-Us.html.

Cheers all! A BIG Thank you goes out to everyone who has helped us so far. We are so close and we look forward to sharing our pints with you and the community!!
(a place where beer is made commercially according to the wiki) This question was asked last week and I was surprised! So I gave the lowdown to the questionee and proceeded to explain how our operation would work. A brewery is a new concept around here and with it hopefully comes inspiration for others to do the same, whether it be another brewery, restaurant, or specialty shop. These places are unique, cool and give Manassas character! My hope for the future of our town is to see more mom & pop businesses. We live in a franchise city compared to places like downtown Alexandria along King Street or downtown Asheville, NC where a different brewery is on every corner. Well, not literally, but Asheville was named beer city USA and they have a lot of breweries!

This month I reveal our layout a bit more. BadWolf is simply a very small taproom. 6 beers will be on tap (usually) with our customer area just large enough to accommodate some people sitting and of course standing room. Our bar is being built from scratch which will look great. Another cool thing - we will have a sit down pacman table loaded with hundreds of games including pacman and other fun ones from back in the day. Free popcorn will be available popped right on site in the cool little popcorn cart. Of course we will provide our freshly made beer in growlers to go. You will be happy to know there is a large fermentation room to store tons of kegs of happily fermenting beer. Behind this will be an sweet office complete with 4 walls and carpeting! It does not include a window view unless we paint one. Damn.

Behind the office and down the main hall is a large room for storing lots 'o grains and you can't live without a bathroom so we put one of those in. It comes with free toilet paper and hand towels. One day, I will get BadWolf the cool sustainable Excel dryer.

T-shirts, BadWolf pint glasses, BadWolf stickers and the cool stuff will be available for purchasing once we open.

WHEN ARE YOU OPENING, GIVE ME A DATE!?

Um, this spring and sorry, but no date confirmed until we start testing our brewing system which is about to be installed shortly! Hang in there. Don't worry, we can hardly wait too.

WHAT BEER WILL YOU HAVE ON TAP?

The brewmaster has 6 recipes selected (which I will keep a secret for now) and the beer will change as we brew new batches. No single recipe will remain on tap consistently. If you have a recipe you would like us to do, please go to our website and click the taproom tab. The brewmaster may even invite you to brew with him.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-6515580322238282855.post-9647759547905993092013-02-12T09:16:00.001-08:002013-02-12T09:16:36.341-08:00Big MilestoneOn February 6, 2012 TTB approved our Brewer's Notice! We couldn't believe our eyes when the approval appeared in our inbox, finally! We submitted the application in early October and we knew 120 days was the average processing time. Now it's all about the VAABC application which will be submitted shortly. Average processing time is 30 days.

All of the plumbing work has been completed and passed inspection. Just a few days ago, we passed the electrical inspection and will be starting drywall very shortly followed by grinding and sealing the floors. The brewing equipment and control panel will be installed along with our dishwasher, 3 compartment sink, hand sink, kegerators, and the bar. The bar is a simple design built from scratch and one of the cool features will include embedding bottle caps along the top and stained wainscoting.

The customer area will look like...wait, we don't want to tell you everything!
This gave us the green light to begin buildout phase. The plumbing crew, in a matter of a few days, marked the floors, cut the concrete up, reworked the plumbing in preparation for the dishwasher and sinks, then had it reviewed by the inspector which passed inspection this morning. Today they will fill in the holes with new concrete. The path of dirt between the concrete sort of reminded me of what the "Graboids" from the movie "Tremors" left behind. After plumbing work is done, the studs for walls and electrical work will be configured.
Okay, ready to serve beer? Not quite, we have completed a few requests on our application and sent those back to the TTB so they could finish reviewing it. We estimate the application should be approved by the end of the month. After this phase, we work with VA ABC for state approval which takes approximately 30 days. After buildout is complete, test batches of beer on new equipment will begin. In the meantime, you can always order your BadWolf growler or pint glass in our online store, you know, to test out the growler and glass to see if it holds beer?
An email from TTB was received stating that our application was given a tracking number and that a Specialist was assigned to us. Oh boy! One tiny step forward. Patience is all that is needed. The application process does take some time but the good news is it will eventually go through. When that happens, we will celebrate.

While we eagerly wait, one of our latest belgian beers will be opened tonight and tasted. Well, (ah-hem) let me clarify, it has been opened and IS being consumed by all those lucky souls present. If Jeremy enjoyed writing, I would have him talk a little more about it which is another reason why we look forward to opening BadWolf. He loves talking about his beer!!!

There are so many people we've run into who aren't familiar with craft beer, even more, the idea of a nanobrewery opening in their town! Some people think it's a bar and then we have to clarify that it's not just a bar, there's much more to it. All of the production is done in-house and served right there. Talk about local business and building community! Prior to prohibition, breweries abounded in many cities and the only reason there wasn't a national beer brand was because refrigeration had not been invented and thus the distribution networks lacked. Who wouldn't want freshly brewed beer on site? Sometimes we use the winery example to explain the concept. From some of the material we have read, good beer and fine wine are quite similar and you can learn a lot from reading about both beverages. In fact, beer is awesome because the most expensive bottles of beer are not as pricey as the cheapest bottles of wine. Although, that may be changing as more expensive ingredients are going into the recipes and bottle conditioning becomes more popular...

Guess this is just a rambling blog tonight. Cheers anyways!

In our proposed legislation,
the 3-tier system is still in place. As of 2008, wineries distribute their own wine as
contracted employees of the Virginia Winery Distribution Company. So they
essentially self distribute, but they only have to pay a $5 fee for each
transaction using a special database. No 27% to 35% markup on each keg. Utilizing the same setup with the Virginia Winery Distribution Company, we could rename it to the Virginia Wine and Craft Brewery Distribution Company.

This means that small breweries like ourselves, would sell kegs for what they are worth minus a few bucks! So BadWolf could still have our wholesaler drive our kegs to their far away destinations but we could also have a choice to deliver our own kegs to the restaurant down the street, and charge almost full price for the keg.

As we discussed in our letter, this would help small breweries get off the ground and since wholesalers have a great network of places to distribute beer, small breweries who eventually scale up could take advantage of their services. But in the meantime, this legislation helps out the small guys like us.

All we need to do is have a few breweries back us up and get the draft legislation in place. We need this soon! The VA Brewer's Guild is aware of the idea and apparently some breweries are already working on legislation. We have contacted those breweries and we are now working together to see if we can get the legislation passed by next year!!!

We've accomplished a lot already! Shoot, maybe I should create a pocket guide to opening your nanobrewery at some point? Don't steal my idea now. If I could sum up the process so far in a few words it has been a juggling process with the guidance of our business plan. What would we do without it? Did I mention teamwork? Between Jeremy and I, we both pickup where one leaves off or work on two or three things at once. I cannot forget everyone supporting us. Thank you! We are getting the job done!

I think back to when we started telling everyone we were planning on opening a brewery in the spring. Just saying this made us realize we had promised everyone and did not want to let them down! Therefore we had no other choice! Note to self - this is a great motivating strategy.

So what are the major stepping stones accomplished to date?

Incorporate BadWolf as an LLC on June 28, 2012 - Spent $100 committing to the first step. It was a cool feeling!

Obtain our EIN number

Leased our location

Apply for our licenses

File Brewer's Notice to TTB - application is almost ready to submit! Here is what they require: http://www.ttb.gov/applications/pdf/brewery.pdf This takes approximately 53 days to process

Next is state - approximately 30 days to process

Local stuff

Spend money - The fun part has been ordering all the gear and spending the money! Scary at first to watch a large lump sum in our cart be checked out online and realize we are really doing this. My guide has been our the budget and so far and I'm excited that we've stayed under budget! Leaves more wiggle room if we have hiccups in the buildout which I am sure we will.

Marketing - we've also set up all the other fun stuff. Twitter, Facebook accounts, our webpage: www.badwolfbrewingcompany.com. Submitted our listings to Google Places & Yahoo. Ordered our beta tester t-shirts and setup a phone line - thank you Google Voice. Love it.

Banking & Accounting - Setup our business checking accounts and ordered Intuit Quickbooks

Planning for Buildout - While doing steps 2-6 we have also connected with our Architect - Loveless & Porter who has completed the preliminary drawings and provided our proposal. Next step is getting Manassas City's approval.

Misc - Membership with the Brewer's Association.

While doing all of the above, we still had to brew beer to make sure it tasted good of course! Brought 4 corny kegs to the neighborhood Oktoberfest for everyone to try including our chocolate oatmeal stout, pale ale, blend ale and an ESB. It was all a hit!
We recently submitted a letter to both of our local representatives and want to encourage other Virginia breweries to jump on board with our idea. This would help small breweries get off the ground and distribute their beer just as the Virginia wineries do.

Dear Senator Barker / Delegate Anderson:

My name is Sarah Meyers, a native resident of Manassas with a Bachelor of Science in Business Management from George Mason University's School of Management. I have worked in small business for over 14 years and currently work in a small IT firm locally. My husband and I have plans to open the first craft nanobrewery in Manassas. We have been discussing and researching our options since 2009 and have our business plan ready to go. We were ecstatic to learn about the new legislation SB 604 recently passed for breweries in Virginia.

The reason for my correspondence is that we have hit a stumbling block with the three tiered distribution system Title § 4.1-500. Breweries cannot distribute their beer unless a contract is signed withan independent wholesaler. If we began as a large scale brewing operation, this would not be an issue. Nanobreweries can only just break even with the current distribution model. The majority of our revenue is absorbed by the wholesaler, compounded by the fact that there are only a few wholesalers to choose from inour locality, this is a formidable barrier to small VA family business. My observation is that the Virginia wine industry is able to more or less self-distribute, even the smallest wineries can deliver to local stores and restaurants through a state organization, the Virginia Winery Distribution Company, at much less cost than using an independent wholesaler. What makes the wine industry different from the craft beer industry?

I propose a similar state sanctioned beer distribution company, the Virginia Brewery Distribution Company. This would be a large step toward microbreweries getting started in Virginia and once these small, family breweries scaled up, they could utilize the distribution system. Wholesalers would ultimately receive more customers as nanobreweries scaled up their operations! Virginia would be in competition with North Carolina and the Pacific Northwest for the greatest variety of breweries and would be able to supply the distributors with hundreds of different types of quality VA beer. This means more jobs, more revenue and more tourism for the State. As theBrewer's Association mentions, "Growth of the craft brewing industry in 2011 was 13% by volume and 15% by dollars compared to growth in 2010 of 12% by volume and 15% by dollars." It's an incredibly viable industry right behind Virginia's wine industry. We need to give the burgeoning craft beer industry the same opportunity.

COMING SOON!

Since mid 1990's, the craft beer industry has witnessed accelerated growth. Virginia
was recently named one of the 7 top beer destinations in North America by the
Travel Channel and August was dubbed Virginia Craft Beer month!

I'd like to point out that many of the Northern Virginia cities such as Alexandria,
Arlington, Centreville, Ashburn, Vienna, and even Fredericksburg each have
their own breweries. However, historic Manassas, with its local pride, bustling
farmers market, seasonal events, and growing nightlife sadly lacks a brewery.
Someone had to step in and fix this horrific problem! So, how did we get
started on this idea?

Jeremy was inspired to start brewing after his high school class took a visit
to Germany where he was introduced to full bodied beers of all sorts.
Since his trip, he has brewed over the years and said that one day he
would start a brewery but never thought that it would really happen.

During my entrepreneurship class at George Mason
University in the spring of 2009, my group was clueless on an idea for the final project. Jeremy
threw the brewery idea out there. So the business plan was created. Then
Jeremy showed our group how to brew a nice pale ale and the idea was presented.
It was so well received that our team won first place in my class against a
judging panel of professional experienced entrepreneurs. They loved our
beer (and yes, we provided samples) and said if we ever opened up, they'd be
our first customer! Needless to say, we received an "A" on the
project!

Based on our research, we observed that the market was there and the demand for
craft beer was becoming more pronounced in the US. The solution to adding more
value to our lives was staring us right in our face, but we agreed were in
no situation to open a business. It was all so overwhelming, especially with
the regulation in Virginia requiring us to serve food with pints. We either
needed a large amount of capital to get started on a large brewing operation to
profit on distribution through economies of scale like RedHook or we could try to do
a brewpub the Dogfish Head way. Well, we did not want to run a restaurant and
we sure as hell did not have a large chunk of change to invest in a million
dollar brewery. So the idea was put on the back burner.

Over time, friends and family planted little seeds here and there.
Family members would give us brewing articles about some successful
entrepreneur or give us some "starting your brewery" business
book. We talked a bit more about starting the brewery and I even pulled
out the business plan. Jeremy
continued to brew and we continued to mention we would do it someday when the
time was right.

After our fantastic little boy was born in Jan 2012, we started talking with
people again and the "dream" was mentioned casually to some friends
who had started their own incredibly successful businesses. Three businesses
come to my mine and dammit, if I wasn't starting to get pissed off! I thought
to myself, why had we not started our business!? Then Jeremy came home one day
and said he really wanted to be his own boss. Either he was going to work for
someone else forever, or he was going to work for himself.
Almost simultaneously, we found out legislation in Virginia was changing
for breweries in our favor. VA bill SB604 amending code section 4.1-208 ¶
1 effective July 1, 2012 provides the legal opportunity for a brewery to serve
beer on premises without the food requirement! (so no restaurant is needed to
sell our beer). So the stars began to align from this moment on. It's
no fun drinking all of our beer in the garage without sharing it! We can't sell
it either because we need that fancy brewer's license. So all the more reason
to take the next step. It suddenly turned into the question of
"What are we waiting for? Let's do it!".

We pulled out the old business plan and worked endlessly on revising the darn
thing. It was so outdated and needed a good scrubbing. After round 1, we had a
SCORE counselor review it. Then for round 2, an excellent
entrepreneur friend of ours (who loves to work on business plans for grad
students) critiqued the hell out of it. No problem, we needed to fix some
stuff, well, maybe a lot of other stuff. 4 extra eyes are better than our eyes!
We did it though! Several beers later and nights of researching and
all that jazz, and it was done. A masterpiece in our eyes. It was the golden
ticket to our dreams. Maybe I'm exaggerating it just a little bit.

We thought of many names for the brewery including one of my favorites,
"BeerKat" since there were so many "dog" brewery names. We
also thought of local names from the area. Someone can take the BeerKat name if
they want, it's still my second favorite to BadWolf. Well, I'm sorry to
disappoint you but we want to keep it a secret how we decided on BadWolf.
That's for you to figure out!

Needless to say, we could not have picked a more perfect time for this project.
Enter BadWolf Brewing Company. BadWolf, with it's local focus and community
ties, is the perfect fit for Manassas. Our small batch approach to brewing
allows us to produce excellent beers and a dizzying variety of recipes to suit
all tastes. BadWolf's focus on customers and customer feedback will allow us to
tailor our selection and recipes to the regions' tastes. We will open a tasting
room for customers to visit and of course fill growlers so everyone can taste
all of the goodness at home and share it with friends. Our current timeline for
opening is Jan 2013. We have placed a letter of intent on a space and will be
working on signing the lease very shortly. Then we start the buildout and complete the
fun and exciting paperwork process for licensing!

Whatever it takes on our part, I promise everyone there WILL be a nanobrewery
in Manassas next year. It's bold promise but those who know Jeremy and I know
that whatever we set our minds to do, we accomplish! We look forward to serving
our beer to the community. Have one (or two, or more beers) while you wait. We
cannot wait until opening day. Thank you to everyone who has helped us this far
and continues to support us. We could not have done it without you.

Cheers!
